New!!! Audrey's Amazing Dill Pickle Soup Mix
YOU ARE GOING TO LOVE THIS SOUP!!!!
You will need:
16 oz jar Dill Pickles (with juice)
1/2 Cup Sour Cream
Open soup package. Set aside the small packet (cornstarch). Whisk remaining dry ingredients into 8 cups of cold water. Add all of the pickle juice (only) and heat on high. While waiting for soup to boil, slice, dice or chop dill pickles and stir into soup. Bring back to a boil. Reduce to simmer for 35-40 minutes. Whisk the sour cream and cornstarch together in a bowl. Slowly ladle about 1 cup of your hot soup into the bowl (so it does not curdle), whisking all together. Once it's completely blended pour slowly while whisking into the pickle soup. Continue to stir & heat for 1 to 2 minutes longer. Serve & ENJOY.
Suggestions: Add cooked shredded or cubed chicken. Serve with hard crust bread or rolls.
Dill Pickle soup gets better as it sits. This is a great soup to make a few hours or day(s) ahead. Adjust amount of pickles and/or pickle juice to suit your taste buds!
